Penicillium candidum is a fungi, which grows on the cheese surface forming a filamentous, felt like covering. It's role in Cheesemaking is to give an acceptable appearance, to control contamination, and to release enzymes for ripening.
It is advised to re-hydrate the product the day before use, at a rate of 1g salt per litre of boiled water. Add one sachet to inoculate 500 litres of milk. Part sachets can be used but should be frozen in a plastic bag to exclude air borne contaminates.
